el ruco is an all-day restaurant and bar at the main beach entrance of Playa Guiones in Nosara, Costa Rica. Open daily from 6am during high season, we serve specialty coffee, breakfast, brunch, fresh juices, smoothies, lunch, dinner, cocktails and natural wine in a relaxed beachside setting.
We’re the first to open and the last to close.
We have a little bit for everyone. All are welcome exactly as you are. Come for coffee, stay through happy hour, dance til late.

We are focused on creating the very best dishes using local produce, cooked and prepared with the least intervention.
Led by Chef Jorge Matamoros, we create dishes that are simple, yet delicious, using seasonal ingredients from local farmers, fisherman and providers within 20 kilometers from our restaurant. We are inspired to maintain Costa Rican classic dishes with Mediterranean influence to create new favorites. Our kitchen is seed oil free, prioritizing organic produce and grass-fed meats wherever possible.

Our cocktail list focuses on seasonality with fresh ingredients and little fuss. All cocktails have a non-alcoholic option available and we have a delicious smoothie and juice menu throughout the day with adaptogenic and boost options available.
Our honey-processed coffee is roasted exclusively for el ruco by a small family farm in Valle Occidental, Costa Rica.
We work with wine distributors throughout Guanacaste to bring the most natural, low-intervention, organic and biodynamic wines to our menu.

el ruco is a space open to accommodate anyone, anytime. With food and drink menus serving from 6am to 11pm, guests are offered a wide range of menu options, reservation sizes and private booking catering options.
We can accommodate events of all sizes, from intimate private-dining bookings through to large receptions, within our property or at other venues. Guests are offered a range of set menus for both seated and standing events.
